...and I am back!!!
It's been a while and before I write a huge post explaining why I have been gone, I have to be honest.
I have not been writing because I have been super busy trying to finish my requirements for my teaching license. I finally finished and did it all before JUNE!!!
I feel like 200lbs have been lifted from my shoulders. I can now breathe!!!
....with that being said, I am back!!! <3 nbsp="" p="">

Adopt a Classroom
I came across this awesome program being offered my Office Max which allows people to adopt your classroom and help out with materials you may need.
Its awesome being a teacher, truly is, however it definitely gets a little pricey. I have friends who don't feel the same but if you want to have an engaging and interactive classroom, some expenses will have to be made.
The kids love when you take out crayons and colored pencils and paper for them to draw and be creative. This is the way they learn and process difficult concepts such a How a Bill Becomes a Law and comparing all 3 branches of government!
This year is a big year with elections and EOCs {end of course exams} so I will go all out for my kids! After all my classroom theme this year is "MRS. E ELECTS EXCELLENCE!!" If I am demanding it from them, I will give them excellence as well {well, as much as I can....lol}

...new home for Krayzeemommie
Writing always been an outlet for me. Whether I was "in love" or terribly sad, I would write my feelings out. I was never much of a talker, just a writer. When I became a new mommie and encountered new experiences and emotions, blogging made sense. It combined my two new passions. As I blogged I attained readers, comments, made new friends, shared experiences and I know find myself wanting more.
I want to INSPIRE and EMPOWER! Yep. That's my new motto, I want to INSPIRE and EMPOWER! I want to inspire people to be better and I want to empower them enough to feel they are capable to do so.
So, those being my goals, I share my "krayzeeness" with you on my blog sprinkled with a little of my therapeutic skills and that's how I try to empower and inspire!
I do have more great news to share with you all... drum roll please!!!!!!
krayZeeMoMmie has a new home and it's www.krayzeemommie.com. I finally have my own web page! ::applause:: I am still not very skilled at working with the web page, however, I know I will get there.
The sad part to this is that all of you who have subscribed to my emails will no longer get them! ::thumbs down:: HOWEVER, you may re-subscribe on my new page on the upper left side. Please take a moment to do this, as I would hate to lose any of you.

New Gig
Since I can remember I have always enjoyed writing. It never mattered what the topic was, I always felt uber comfortable writing about anything. I vividly remember begging my parents to allow me to take a Creative Writing course in 6th grade. It was one of the highlights in my life.
Here I am, about 17 years later as a freelance writer enjoying every topic I write about. I take each subject as a new adventure and I learn along as I write, which thrills me. I thoroughly take pleasure in the fact that people are reading the content I am writing and whether they love it or hate it, we can all learn from it.
So on that note, I can now share with you all that I am the BROWARD COUNTY FAMILY ISSUES examiner at examiner.com. CLICK HERE for my examiner page. I am elated that I can combine my love for writing with the love I feel for my profession and the "issues" we deal with on a daily basis. I am love them both!

SABROSO SATURDAY: Picadillo de Pavo a la krayzee

As you all prepare my version of Picadillo de Pavo, enjoy the Cuban flare it offers to your palette.
Ingredients [serves 4]
2 packs of lean ground turkey
Sofrito [I will explain this later]
Comino
Oregano
Garlic Powder
Cooking Wine
Vinegar
Olives [without the seeds]
Sazon Completa
[1 can and a half] Tomato Sauce
DIRECTIONS
1. Put the picadillo in a large pot. I usually add the cooking wine and vinegar at this point to it simmers. Add 2 tablespoons of each.
2. I like to make sure that the picadillo is broken up and fully defrosted. When you have made sure of that then you can start adding the ingredients. You can add the tomato sauce now. I usually do a can and half when I make 2 packs of the picadillo.
3. Now is a good time to add the sofrito. If you know what sofrito is and have it done, add about 4 tablespoons of sofrito [or as much as you usually put]. When I make sofrito I use [1] green pepper, [1] large yellow onion, [1] large red tomato and a whole garlic. I cut them all up and put them in the food processor and just pulse it until it's all diced up but not quite a puree. Sofrito offers great flavor to the food. I put the remaining sofrito and save it for future meals that week. Some people add salt to the sofrito and olive oil, they say it keeps it fresh.
4. After the sofrito has been mixed in, you can then add the rest of the powders. I have no measurements for this, I just sprinkle on top of the food. My Abuela likes to use a butter knife and fill the tip with each powder. She usually does 2 tips each.
5. After all is mixed in, set the stove to medium and stir occasionally to avoid sticking. After the picadillo has been cooking for about 45 mins, you can add the olives. My Abuela always says that you know the food is ready when the olives are cooked and tasty. [I don't eat olives, so I wouldn't know...lol]
NOTE: as far as Salt, you can add that to your liking.

...Road Trip Conundrum
What would you do?!
Here's the deal: I have a husby who travels to conferences from time to time. He has gone alone in the past and being the sweetheart he is [seriously, he is a sweetie] he missed me and the girls tremendously. He recently found out he has a conference in October in Nashville, Tennessee and this one is for 4 days. He kindly asked if I would consider packing up our kids and driving to Nashville.
At first I wanted to ask what he was drinking because I was certain it was not kool-aid, but then I started to think that this may actually be a cute adventure of our little familia of 4.
I have done my research and the distance would be roughly 14 hours. Obviously with the kids, we would have several stops, considering we have a newbie potty user in our house [gotta take a moment a do my happy dance] & at the time we take this trip we will have a 1 year old and a 3 year old. [whoa...I just got chills]
So, my question to you, my loyal readers and fellow mommies....WHAT WOULD YOU DO!?
Be a good wifey and go with the hubster....or.....play it safe and stay home knowing the idea is a ticking time bomb?!

NEW Disney Value Resort: Summer 2012
Ok, I had to blog as soon as I heard! I am sooooooo excited about this new hotel set to open in 2012 [the year we buy our annual passes...yayyy!!]
The hotel's name will be Walt Disney World Resort! Disney's Art of Animation Resort hotel and the best news is that it will be a Disney Value Resort hotel!! Can you say FAMILY OF 4!?
The hotel draws its inspiration from 4 classic Disney animated films: The Lion King, The Little Mermaid and Disney·Pixar's Finding Nemo and Cars. My oldest daughter is into all of them, so this is definitely a PLUS!
The hotel opens for reservations Summer 2012...I already have that calendared!
